STREET TACO BEEF ENCHILADAS

Ingredients

1 1/2 lbs. (.680 kg) lean ground beef
1 small onion, chopped
1 Tbsp. Oh! So Garlic
2 tsp. Sunset Seasoned Salt
1 Tbsp. Brown Sugar Chili Rub & Seasoning
1 can (680 mL) tomato sauce
¼ cup Peach & Mango Habanero Salsa
½ packet Street Taco Dip & Cheeseball Mix
6 large flour tortillas
2 cups shredded cheddar cheese
Add your favourite Toppings: guacamole, salsa, sour cream

Instructions

Preheat oven to 375°F. In large skillet over medium-high heat, cook and crumble beef, onion and seasonings. Cook until beef is no longer pink; drain off liquid. Remove from heat. While beef is cooking, in a medium bowl, combine tomato sauce, salsa and Street Taco Dip & Cheeseball Mix. Add 1 cup to meat mixture; stir to combine. Cool slightly. Spread 1/3 cup sauce across the bottom of a greased 13" x 9" baking dish. Place about 1/3 cup meat mixture down the centre of each tortilla. Top with 1-2 tablespoons cheese. Tightly roll up tortillas and place with them seam-side-down in baking dish. Pour remaining sauce over
enchiladas and sprinkle with remaining cheese. Bake for 20-25 minutes or until bubbly. Let stand 5-10 minutes before serving. Serve enchiladas garnished with your desired toppings.
